This victorinox brand "rough" steel is primarily used as a sharpening tool. Usually 4-6 aggressive strokes on this steel will sharpen your knife. You will see tiny pieces of metal being removed from your knife. then use a smooth steel to maintain that sharp edge. A rough steel only needs to be used occasionally (usually cut several whole deer between uses), whereas a smooth steel should be used often (a few gentle strokes every 5-10 minutes of cutting).
